Markup divides profit by cost; margin divides profit by selling price. Since selling price is always higher than cost when there's a profit, margin is always a smaller percentage than markup for the same numbers.
Margin is generally more useful for profitability analysis since it's a percentage of revenue, which is what most financial reporting and target-setting is based around.
SaaS gross margins often target 70-80%+ since marginal cost per customer is typically low, but the right number depends heavily on your specific infrastructure and support costs.
